Secluded and with music provided by the forest's nocturnal tree-frog chorus, the romantic Anse Chastanet Resort in Soufrière, St. Lucia, is a popular Caribbean getaway for couples, a tranquil world at the end of a two-mile forest road. Perched on 600 acres of tropical foliage, the resort provides snorkeling and scuba diving within 100 yards of the beach, kayaking, jungle mountain biking and hiking, sunset cruises, deep-sea fishing, and tours of Soufrière's "drive-in" volcano. Five minutes away, the resort's second beach fronts a 500-foot wide, two-mile deep canyon that once served as a 17th-century sugar and cocoa plantation. Here, 12 miles of mountain- biking and hiking trails snake through jungles laced with mangos, coconuts, bananas and cocoa.
Guests can relax at the resort's Kai Belté Spa with shiatsu and hot-stone massages, warm oil and herbal wraps, and yoga. The resort's hillside Piti Piton features panoramic Caribbean views, candlelit ambience and "treetop" seating, and serves steamed mahi mahi, rack of lamb, pan-seared kingfish, and chicken breasts stuffed with goat cheese. The open-air, beachfront Trou au Diable specializes in salads, sandwiches, rotis, and Italian and Creole foods.

Secluded among tropical foliage on the beach or in the hills, the resort's 49 guestrooms offer terra cotta tile or hardwood floors, and furniture made from local mahogany, teak, breadfruit, greenheart and purpleheart woods and West Indian madras cloth. Accommodations also include locally made straw rugs, pottery, carved-wood decorations and art, and yellow ceiling bulbs that cast soft light from underneath wicker shades.

Ceiling fans and windows cool the Anse Chastanet Resort guestrooms. Televisions, radios, clocks and telephones are confined to the main building, so guests can relax without modern intrusions.
